Quinoa.and butter bean burgers

About 150g of cooked quinoa
1 tin of butterbeans
Half  a block of feta
Tablespoon of red thai paste

This makes about 12 burgers.

Put all ingredients in food processor till you can mould into burgers

Cook ar high heat about 200 for 15 minutes.

Serve with salad and home made veg wedges.

Lentil bake

This is a cheap quick filling and tasty meal
Great with broccoli.  My kids love this recipe.

2 tins of lentils ..green
Some veg I used frozen peas frozen green beans and tin sweetcorn
Passata
Applesauce…brought or homemade
Oregano
Chilli
Basil
Paprika
Mozzarella
Handful of cheddar

Cook the lentils and veg
Mix them together…add the applesauce and mix that in too.
Heat the passata with the herb and spices.
Mix in 2 tbsp of passata.
Pop in oven proof dish spreaf passata on top and sprinkle the cheddar and mozzerella.
Bake at 200degres for 40.mins

Job done. Simple. Yum.

Beetroot risotto y

This is lovely and so simple …my husband has always told me.he doesnt like risotto..he loved this.

Handful shallots
2 garlic cloves
250g risotto rice
2 cooked beets..diced
500ml stock
100mk white wine
100g paramasen or italian hard cheese
Teaspoon butter

Sweat the garlic and shallots
Add the beetroot and coat the rice when coated start adding stock and wine…slowly….keep stiring and add once rice has absorbed.

When all liquid added  taste and then if rice soft stir in butter and cheese.

Add a bit more liquid and keep cooking if too hard.

Simple…and very tasty . My kids loved it just as much as us.

Beet burgers

Beetroot. ..2 balls of the cooked stuff will be plenty
1 tin of  kidney beans
Dried spices..chilli cumin and garam masala
100g grated cheese

Put all ingredients in food processor untill paste like texture and well mixed.

Shape

Put on baking tray and cook for 10 to 15 at about 180 mins or fry or bbq….might be worth pre cooking as a bit wet

spicy bean burgers

ONE tin kidney beans
ONe onion
ONe carrot, grated
HANDful chopped corriander …dried will do if that’s what you have
ONE fresh chilli..chilli flakes or powder will work too
one tbls of flour. I use gram flour but any will be ok
Mango chutney to serve.

Put in food blender or mash with potatoe masher until a chunky paste. PRess together to make burger shapes…you may need more flour. Pop in oven for 15 minutes or so at 180 degrees. TUrn up to 200 for last couple minutes .

SErve in homemade roll or wrap with salad and mango chutney.

Parsnip and potato rosti

personally I like these in a little stack with goats cheese inbetween and cranberry sauce over the top but they taste fine alone as a snack.

2 large parsnips
2 large potatoes
Oil
Salt and pepper

GRate the potatoes and parsnips

Season and mix together in a bowl, take a table spoon amount, and push together, in a hot, frying pan with a little oil, add the spoonful mixture. Cook for about 3-4 minutes, then turn over and cook for another 2-3, minutes .

quick on the hob, mushrooms and bean, fruity chilli

My husband and children love this chilli, its so quick, and though it doesn’t have the heat and depth of a slow cooked chilli it has some lovely flavour and the banana, though sounds strange takes out the heat, so kids love it, and i didn’t tell my husband I added banana, because I knew he wouldn’t want it, but when he tried it he loved it. YOu can just serve it by the side if you prefer. Last time I made this It made enough for four of us to have two helpings plus husband had some next day for lunch, a large portion.

1 onion, peeled and chopped
2 gloves of garlic, peeled and crushed
1 pepper, chopped, I normally use green for this dish
200g of button mushrooms, halfed
100 g chopped green beans
1 tablespoon of paprika…used smoked if you like it hotter
2 teaspoon of cumin
1-2 teaspoon of chilli powder
1 tin of chopped tomatoes
1 tablespoon of tomato puree or ketchup
1 tin of kidney beans
Teaspoon of sugar
2 bananas, sliced into small chunks
Tablespoon of cream

Cook your onions in little bit of oil for couple of minutes, add garlic and let onion soften.

ADd your peppers,green beans and mushrooms for about 3-5 minutes untilj mushrooms are Browning.

Add the spices for 30 seconds and add tomatoes beans and sugar, bring to boil, let simmer for about twenty minutes
STir through the banana and cream, leave for couple of minutes then serve with rice.

YOu can always add extra beans or courgette etc to bulk out to feed more or use what you have in , It’s a cheap meal and you don’t need the cream its just to stop it being so hot, I always taste as I go so before adding banana and cream do taste you may want more chilli or sugar etc x
